Oyster Mushrooms

The mushroom lovers’ mushroom is a classic choice, rich in protein and containing plenty of B vitamins. Oyster mushrooms are known for their wonderful umami flavor. They are excellent when served simply on their own or used to bring complexity to any dish.
While all oyster mushroom species offer health benefits, Golden Oyster mushrooms (Pleurotus citrinopileatus) are considered to have particularly strong antioxidant properties and may offer unique cardiovascular and cognitive benefits. They are known for containing high levels of ergothioneine, an antioxidant that may protect against age-related declines in cardiovascular health and cognitive function.
Pleurotus djamor (pink oyster):This species is another excellent source of bioactive compounds, offering various health benefits, including immune support and antioxidant properties.
All oyster mushrooms share some benefits: They are all rich in vitamins, minerals, and antioxidants, and can contribute to overall health and well-being, including heart health, gut health, and immunity.
Lion’s Mane

This mushroom is a departure from typical mushroom flavor and texture. It shreds into excellent crab-like pieces. In fact, we use it to make a crab cake variation that we like to call Lion’s Mane Saltfish-Style Cakes. They are amazing. We also use Lion’s Mane to make whole cluster steaks as well as pulled dishes similar to shredded chicken or pork.
Studies show that this sculptural masterpiece of a mushroom promotes nerve and brain health, helps relieve symptoms of depression and anxiety, improves memory, and reduces inflammation. * Personally, using Lion’s Mane regularly helps us with mental clarity, focus, and memory.
