Ingredients
For the Mushrooms
- 1.5 pounds of oyster mushrooms
- 4 tbsp Jerk Seasoning of Choice (we recommend Walkerswood Jerk Seasoning)
- 1 tbsp olive oil
- Metal or soaked wooden Skewers
For the Golden Plantain
- 2 ripe golden plantains, cubed 1/4 inch thick
- Avocado oil (or high-heat oil) for frying
Method
- Marinate the Mushrooms. Tear oyster mushrooms into large pieces. Toss them in your jerk marinade until fully coated. Allow them to rest and soak up the flavor for approximately 15 – 30 minutes.
- Thread the mushrooms onto skewers. If any are wide, fold them over to double up-this gives them more char potential and helps hold moisture.
- Heat your cast-iron pan, BBQ grill, or non-stick pan over medium heat with little oil. Lay down the skewers and let them sizzle– don’t move them too much. Turn every couple of minutes until all sides are golden and edges are crisp (approximately 6-8 minutes).
- Glaze (Optional — but seriously next-level):
For an irresistible finish, brush each skewer with a bit of leftover jerk marinade mixed with a touch of agave or brown sugar during the final 1–2 minutes on the grill. Let it sizzle and bubble just enough to caramelize, coating the mushrooms in a sticky-sweet layer that takes the flavor over the top.
Serving Suggestions
In a Wrap or Taco: Use the mushrooms as a filling for a wrap or taco, topped with slaw, avocado, and a drizzle of lime juice.
With Fried Plantains: Pair the mushrooms with sweet fried plantains as I did for a balanced and flavorful plate.
